Perfect for a cocktail party or a light lunch, these smoked steelhead pinwheels come together in about five minutes and can be made a day ahead and stored in the refrigerator.

Ingredients
5 lavash sheets (the rectangular ones are much easier to use than the round ones)
5 4 oz. packages of Gingrass Smoked Steelhead
12 oz. whipped cream cheese spread
1 small head hearts or romaine, hard bases cut away
1 pkg. micro arugula
1 small cucumber cut into six spears, seeds sliced off
2 lemons, juiced
Pinch of kosher salt

Method
Gather and prepare all ingredients. Spread the cream cheese over one half of each lavash, then sprinkle one teaspoon of lemon juice over the cream cheese and give each one a sprinkle of kosher salt. Lay two leaves of romaine over the opposite end of each lavash, then place the slices of smoked steelhead over the top. Arrange the cucumbers as shown. Next sprinkle the micro arugula over the cucumbers and romaine, then roll tightly. Wrap individually in plastic wrap and refrigerate until ready to serve.

To serve, cut into desired thickness right through the plastic wrap, then peel the wrap off. Display on your favorite platter and enjoy!
